I first fell in love with Thai food the summer after eighth grade. That summer, I started and finished all seasons of the show “The OC.” In that show, the family always ordered Pad Thai for dinner. So naturally, if the Cohen family loved it, I had to try it. I ordered the dish for delivery from our local Thai place and absolutely fell in love with it. I loved it so much that whenever I ate Thai food, I would order Pad Thai. Only Pad Thai. It was not until way later that I started branching out in Thai food. I discovered that there is practically nothing on Thai restaurant menus that I don’t really like. I love how Thai food combines sweet and savory flavors. That is exactly what happens in this dish. This dish combines the savory carrots, cabbage, cucumber, and quinoa with the sweetness of peanut sauce and coconut flakes. It is a healthy and tasty way to enjoy some Thai cuisine.
I have seen healthy Thai quinoa or rice salads before. This one I kind of just improvised and threw some ingredients together so I did not do exact measurements. However, I estimated the amount of everything that I put in. Below is the recipe. If you would like more of some ingredient, add more. That is the beauty of salads, you can always adjust the amount of the ingredients to your liking. Here is the recipe:
RECIPE:
Salad Ingredients:
- 2/3 cup cooked Quinoa
- 1/2 cup grated Carrots
- 1/2 cup diced Cucumbers
- 1/2 cup chopped Red Cabbage
- 1 Tablespoon Coconut Flakes
- 1 Lime Wedge
Directions for Salad:
- Mix together all ingredients into a bowl
- Squeeze lime wedge over all ingredients
- Serve with peanut sauce on the side
Peanut Sauce Ingredients:
- 1 Tablespoon Peanut Butter
- 2 Tablespoons of Sesame Oil
- 2 Tablespoons of Soy Sauce
- 1 Tablespoon Brown Sugar
Directions for Peanut Sauce:
- Mix all ingredients together
- Serve on the side or mixed in with the salad
