Many of you have probably seen the chocolate avocado pudding consisting of only avocado, cacao powder, and sweetener- it’s delicious! It sounds like it would be way too healthy…I mean chocolate dessert made with avocado? It’s weird but trust me it works (see these Chocolate Matcha Truffles for another dessert with avocado). It actually works so well you don’t even know it’s made with avocado. Avocado not only goes well in chocolate pudding, it is an amazing healthy ingredient in these fudgsicles (or chocolate popsicles) adding extra creaminess to a frozen dessert without the dairy. These Almond Butter Avocado Fudgsicles are a super delicious and healthy treat, and are sure to be a crowd pleaser.
What is in these fudgsicles?
There’s no processed ingredients, dairy, or refined-sugar in these popsicles making them a healthy decadent treat. The fudgsicles consist of:
- Avocado
- Cacao Powder
- Coconut Milk (full-fat from a can)
- Vanilla Extract
- Sweetener of your choice (Stevia, Monkfruit, Maple Syrup, or Honey)
- Almond Butter
How do you prepare these fudgsicles?
- Blend the avocado, cacao powder, coconut milk, vanilla extract and sweetener in a food processor or high speed blender until creamy and smooth
- Swirl in the almond butter to the chocolate fudge mixture
- Spoon in the almond butter fudge mixture into a popsicle mold (I used this popsicle mold I got on Amazon)
- Freeze at least four hours to overnight in the freezer
- Optional: dip popsicles in chocolate shell and sprinkle with sea salt and almonds
Can you make this sugar-free?
Yes! I made it sugar-free and it was a really tasty healthy dessert that satisfied my sugar craving. In place of using maple syrup or honey, you can make it with stevia or monk fruit sweetener. I made it with liquid Stevia, as I feel like the liquid blends into the avocado mixture better than the powdered or granular sweetener.
Tips for making these Almond Butter Avocado Fudgsicles:
- Make sure the avocados you are using are ripe– they will not become as creamy and delicious if you use hard, unripe avocados
- Use liquid sweetener like liquid stevia, monk fruit, or maple syrup
- Mix in natural, smooth almond butter
- Freeze in a silicone mold (I find the popsicles are easier to get out) or if you don’t have a popsicle mold, use dixie cups and just peel off the paper cup when frozen
- The fudge mixture is thick so tap your popsicle molds on the counter a few times ensuring that the mixture sinks to the bottom before freezing
- When frozen, run the mold under cold water for a few minutes so that the popsicles will pop out more easily
