Happy Fourth of July, everyone!!
The Fourth is definitely one of my favorite holiday’s. 1) It is in the summer, and any celebration in the summer far exceeds any celebration in the winter or spring with the exception of fall, the greatest season ever, 2) It’s full of grilling delicious foods and drinking refreshing drinks, 3) You end the day with an awesome display of fireworks.
We are doing the exact same thing we did last year for the Fourth. We are posting up on the docks of the Esplanade (aka the park along the Charles River for those of you not familiar with Boston) with some drinks and picnic handy snacks and hanging all afternoon/night until the fireworks start. Last year, this dock, which is right outside of my apartment on the river, was the best view of the fireworks I have ever had. I feel like the only view that would be better than this dock is if you are in a boat on the river itself. It felt like you were literally right under the fireworks. Needless to say, I am so excited to spend another Fourth in that exact same spot.
Enough about me. Let’s talk about this fruit pizza. This AMERICAN FLAG fruit pizza.
First off, it’s delicious and actually kind of refreshing…I’ll get to that in a minute. The crust is an oat base composed of rolled oats, oat flour, honey, and coconut oil. The “frosting” is coconut cream, the white cream that forms at the top of a refrigerated can of full-fat (MUST be full-fat otherwise the cream will not form) coconut milk. Then it is topped with blueberries, strawberries, and bananas to make up the American flag.
Since Boston has been in a literal heat wave (90-95 degree days) and we live in a third floor AC-less city apartment, I have had to keep the pizza frozen to keep the coconut cream from melting off and destroying the entire visual of this pizza. Therefore, I also think it’s a refreshing snack because I’ve been eating it half-frozen throughout this heat wave.
It’s a healthy, vegan (if you omit the honey and swap for Maple Syrup) snack! And let’s be honest…it’s really cute and would be a great crowd pleaser for any Fourth of July BBQ or party.

American Flag Fruit Pizza
Ingredients
Crust
- 2 cups Rolled Oats
- 1 cup Oat Flour can use store bought or make your own by pulsing oats in a food processor
- 1/3 cup Honey or Maple Syrup if making it vegan
- 1/3 cup Coconut Oil melted
Fruit Pizza Toppings
- 1 cup Coconut Cream the white cream that separates to the top of a refrigerated can of Full-Fat Coconut Milk
- 6 ounce container of Blueberries fresh
- 1 cup of Strawberries
- 1 medium Banana sliced
Instructions
Crust
- Preheat the oven to 350 degrees Fahrenheit
- Mix together all of the ingredients for the crust until the liquid is mixed evenly throughout
- Place the crust mixture into a 9" round springform pan or baking pan
- Pat the mixture down evenly across the bottom of the pan using the back of a spoon or the bottom of a glass cup
- Make sure the mixture is covered evenly across and is firmly patted down
- Place the pan in the preheated oven and bake for 10-15 minutes until the crust has set
- Once the crust is done, let it cool to room temperature (or place in the refrigerator or freezer) before putting the toppings on
Toppings
- Refrigerate a 13.5 ounce can of coconut milk for at least two hours or overnight
- Once the coconut milk is chilled, open the can and scoop out the white cream formed at the top, leaving behind the clear liquid in the bottom
- Spread the coconut cream evenly across the cooled crust
- Slice the banana into thin rounds and the strawberries into quarter slices
- Decorate the coconut cream with blueberries, bananas, and strawberries in the pattern of a flag (as seen above in the pictures)
- Serve and enjoy!
