This Grilled BBQ Chicken Peach Salad just screams summer. Grilled tangy sweet BBQ chicken mixed with char-grilled sweet warm peaches on top of crisp romaine, fresh cherry tomatoes, crunchy corn, and creamy feta cheese. It’s a salad for summer produce lovers. Say goodbye to boring salads and hello to flavor-packed, delicious salads.
Now, has anyone ever tried to use a grill pan in a small apartment kitchen? I don’t have a yard as I live in a tiny apartment in the city of Boston and must resort to grill pans on the kitchen stove as my method of “char-grilling”. Every time I use the grill pan, I set off the smoke alarms…multiple times. Every. Damn. Time. Therefore, it’s safe to say that I don’t grill all that often in my kitchen…I prefer the outdoor, non-smoke alarm ringing method. But when I do grill, it’s meals like this that make the endless ringing in my ears and smoke inhalation all worth it!
I’ve been trying to cut back on refined carbs and carbs in general as I approach my friends wedding next week. As I’ve mentioned in previous posts, I am excited to be my friends groomsperson wearing a grey dress that matches the guys’ grey suits on the groom’s side. It’s in Chicago at the Garfield Conservatory and I cannot wait.
But, as I am prepping to stand in a beautiful grey gown, I have been a lot more health conscious than I usually am (which is saying something). This salad has made my low-carb life a hell of a lot easier and tastier.
BBQ sauce tends to have a lot of sugar. But according this article, Stubb’s Original BBQ Sauce has a lower sugar content with only 4g of sugar per serving. I also easily found it at my local Whole Foods and couldn’t find any of the others that the article listed to give a try. But I really like Stubb’s because it’s lower sugar and doesn’t sacrifice the smokey, tangy goodness that makes up traditional BBQ sauce. I would like to eventually try the BoneDoctors Carolina Bold BBQ Sauce which has 1 gram of sugar per serving and see how it compares. But until then, Stubb’s is my favorite.
This salad really does pack all my favorite summer foods into a salad. There’s something about grilled BBQ chicken and grilled peaches that instantly put a grin on my face…and make my tummy happy. It’s just so damn good.
So go ahead, enjoy the taste of summer melt in your mouth and make this salad!
Grilled BBQ Chicken Peach Salad
Ingredients
- 1 lb. Chicken Breast boneless and skinless
- 1 cup BBQ Sauce I used Stubb's
- 2-3 Peaches medium-sized
- 1 Tablespoon Olive Oil
- 1 head of Romaine Lettuce chopped
- 1 cup Cherry Tomatoes halved
- 1/2 cup Corn Kernels cooked (I bought frozen)
- 1/2 cup Feta Cheese crumbles
- Your favorite Ranch dressing or dressing of choice to serve
Instructions
- Place the chicken breast in a bowl and pour the BBQ sauce over it
- Let marinate in the BBQ sauce for at least an hour or can leave in fridge overnight
- While the chicken is marinating, cut the peaches into slices and brush with some olive oil
- Once the chicken breasts have marinated, heat the grill or grill-pan to medium-high
- Place the marinated BBQ chicken breast and peach slices on the grill
- Cook the chicken breast for about 5-6 minutes on each side
- Cook the peaches for about 3 minutes on each side or to your desired tenderness
- While the meat and peaches are grilling, chop the romaine in to bite-sized pieces, chop the cherry tomatoes in half, and thaw and heat up the corn kernels
- Once the chicken and peaches are cooked on the grill, take off and slice the chicken
- Feel free to toss the grilled BBQ in more BBQ sauce if desired
- Place the romaine, cherry tomatoes, corn, feta cheese crumbles, grilled chicken, and grilled peaches into two salad bowls
- Drizzle with your favorite ranch dressing or salad dressing of your choice
- Serve and enjoy!
