It is about time that I put this recipe on my blog. This is the breakfast that I eat every. damn. day. Without fail, I have yet to get sick of it. Even when I go out for brunch now, all I am craving is my PB & J oatmeal.
The reason I never get sick of this breakfast could very well be because I have an addiction to peanut butter. It’s bad. If there were a Peanut Butter Anonymous support group, I would definitely need to be a member. Sometimes I go through a full jar by myself in a week. It’s honestly the best thing ever.
But, it’s important to note that not all peanut butters are created equal. Make sure to get peanut butter that is made solely from peanuts. No added oils or sugar. That is when peanut butter can become “fake healthy,” and in reality be super bad for you. The peanut butter made of just peanuts is the healthy peanut butter and the most natural and best tasting. My favorite brands are Teddie All Natural Peanut Butter and the 365 Everyday Value Organic Creamy Peanut Butter from Whole Foods.
Anyways, back to this oatmeal. It’s so simple and so good. To make this delicious nutritious breakfast, you just need four simple ingredients. Using steel cut oats makes for the healthiest oatmeal breakfast you could have. Steel cut oats are the least processed form of oats resulting in a lower glycemic index. A.k.a., they’re the cream of the crop of oatmeal.
Secondly, you need FROZEN berries. Key word here is “frozen.” I swear using frozen berries has transformed my oatmeal breakfast making it a million times better. Why? Because when frozen berries are heated up in the microwave or on the stovetop, they melt and form a berry-like-sauce consistency. The extra berry juice mixes in so well with the steel cut oats, making it so much easier to incorporate all of the flavors into each bite and much better than fresh berries. Not to mention, for those of us who do not live in sunny climates year round (shout out to my fellow Bostonians!), using frozen berries will also save your wallet a bit of cash as frozen are cheaper than fresh. My favorite frozen berries are Wyman’s Triple Berry with Wild Blues. Target also has a really good Antioxidant Fruit blend from Market Pantry.
The best thing about this breakfast is that it’s so easy to meal prep. I’ve been trying to go to the gym in the mornings and it’s made my life so much easier that I can pack a healthy breakfast to eat after my workout. By doing so, it’s enabled me to get to the gym and keep on track to eating a healthy diet.
Now you know my favorite and simplest breakfast in the world. I hope you all like it as much as I do.
