We all know pesto is the sh*t. It’s fresh, tangy, and oh so tasty. And you may be thinking…why ruin an amazing pesto by adding something else…like peas?! But let me just say pea pesto is a game changer. Why? Because it makes it creamier! When adding the peas, it becomes more like a creamy sauce consistency rather than an oil sauce consistency.
You can eat this pea pesto on pretty much anything-it’s very versatile. You can eat it as a dip with some fresh veggies, spread it on sandwiches, or my favorite-on this pasta with roasted tomatoes and burrata.
Also, I’ve been on such a roasted tomato kick. For some reason, to eat raw tomatoes I have to be in the mood. But for ROASTED tomatoes, give me them anytime any place. Eating them roasted completely changes the taste and texture. And they are so so good in this pasta.
And burrata on top of ANYTHING makes anything taste that much better. So this is pretty much the tastiest summertime meal. Excuse me while I kick my feet up on my porch and dig in to a huge bowl of this pasta.
Pea Pesto Pasta with Roasted Tomatoes and Burrata
Ingredients
Pea Pesto
- 2 cups Basil leaves
- 1 cup Peas
- 4-5 Garlic Cloves
- 1/4 cup Walnuts
- 1/4 cup Olive Oil
- 1/4 cup Parmesan Cheese grated
- 1 Lemon juiced
Pasta
- 1/2 pound Whole Wheat Spaghetti
- 2 pounds Cherry Tomatoes I bought two small containers
- 3 tablespoons Olive Oil
- 1/2 teaspoon Salt
- 8 ounces Burrata Cheese
Instructions
Pea Pesto
- Place all ingredients into a food processor. If using frozen peas, make sure you warm them up in the microwave or on the stovetop and drain them before placing them in the food processor.
- Blend the ingredients until smooth.
- Add salt and pepper to taste.
Pasta
- Preheat oven to 425 degrees. And line a large baking sheet with aluminum foil or parchment paper.
- Mix the cherry tomatoes, olive oil, and salt into a large bowl and then spread out evenly onto the baking sheet.
- Bake for 15-20 minutes until golden brown on the tops.
- While the tomatoes are roasting, cook the spaghetti according to the directions on the package.
- When the spaghetti and roasted tomatoes are done, drain the pasta and toss with the tomatoes, pea pesto, and burrata.
- Top with extra cheese, basil, and peas. Serve and enjoy!
