Pea Pesto Pasta with Roasted Tomatoes and Burrata

Ingredients
  

Pea Pesto

  • 2 cups Basil leaves
  • 1 cup Peas
  • 4-5 Garlic Cloves
  • 1/4 cup Walnuts
  • 1/4 cup Olive Oil
  • 1/4 cup Parmesan Cheese grated
  • 1 Lemon juiced

Pasta

  • 1/2 pound Whole Wheat Spaghetti
  • 2 pounds Cherry Tomatoes I bought two small containers
  • 3 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 8 ounces Burrata Cheese

Instructions
 

Pea Pesto

  • Place all ingredients into a food processor. If using frozen peas, make sure you warm them up in the microwave or on the stovetop and drain them before placing them in the food processor.
  • Blend the ingredients until smooth.
  • Add salt and pepper to taste.

Pasta

  • Preheat oven to 425 degrees. And line a large baking sheet with aluminum foil or parchment paper.
  • Mix the cherry tomatoes, olive oil, and salt into a large bowl and then spread out evenly onto the baking sheet.
  • Bake for 15-20 minutes until golden brown on the tops.
  • While the tomatoes are roasting, cook the spaghetti according to the directions on the package.
  • When the spaghetti and roasted tomatoes are done, drain the pasta and toss with the tomatoes, pea pesto, and burrata.
  • Top with extra cheese, basil, and peas. Serve and enjoy!
