Lately, I’ve been trying to eat super clean because I just feel better when I do. I generally eat pretty healthy during the week but tend to consume whatever I want on the weekends. This is a fine approach because it’s all about balance. And when I’m in the mood for a treat or something chocolatey but not super unhealthy, these are the perfect treat. Consisting of naturally sweetened dates, nutritious almond butter, and some antioxidant-rich dark chocolate, these are a great “healthier” dessert.
The real star of these dates is the Espresso Almond Butter. It’s creamy, rich, and full of espresso beans.
I was WAY too lazy to make my own almond butter from scratch…though I encourage you to do so if you are willing. I just made my own espresso almond butter using store-bought almond butter, espresso beans, and maple syrup. This stuff is so good, I saved the leftovers to eat on toast or mix in my oatmeal for breakfast. And, as a plus, it gives you a little caffeine kick to start your day.
Once you whip up the Espresso Almond Butter, you scoop a little bit into the middle of each pitted date. Then melt some dark chocolate, dip the stuffed date into the chocolate, let cool and devour. Warning: they’re delicious AF, and you won’t be able to stop.

Chocolate Espresso Almond Butter Stuffed Dates
Ingredients
Espresso Almond Butter
- 1 Cup Almond Butter, smooth
- 1 Tablespoon Whole Espresso Beans
- 1 Tablespoon Maple Syrup if you like it sweeter, use more to taste
Stuffed Dates
- 16 Medjool Dates pitted
- 1 Cup Espresso Almond Butter
- 1/2 Cup Dark Chocolate Chips
- 1/2 Tablespoon Coconut Oil
- Dark Chocolate Chips, Sea Salt, Espresso Powder to top
Instructions
Espresso Almond Butter
- Add the espresso beans to a food processor and pulse until finely ground
- Mix the grounded espresso beans, almond butter, and maple syrup until evenly combined throughout
Stuffed Dates
- Spoon about a tablespoon of espresso almond butter into the center of each pitted medjool date
- Set all the stuffed dates onto parchment paper and set aside
- Heat the dark chocolate chips and coconut oil in a microwave or over a double burner until the chocolate is completely melted and smooth
- Dip each stuffed date halfway into the dark chocolate or completely submerge in the chocolate
- Place each chocolate-dipped date on to the parchment paper and let cool
- Serve and enjoy!
