UGH once again life has gotten so busy. After this weekend, it will finally be able to calm down…and I cannot wait for some time to just chill! I’ve been working and socializing nonstop. I had my 25th birthday a couple weeks ago, which was a lot of fun. Some friends and I rented out a karaoke room in Boston’s Chinatown and then went out to bars afterwards. It was just how I wanted it to be. The following weekend I drove 9 hours from Boston to Dewey Beach, Delaware, for my cousin’s bachelorette party. That was also a great time with some awesome girls. But needless to say, afterwards I was beat. And then this weekend is my cousin’s wedding. My mom and I are leaving to drive to Pennsylvania on Friday and will return on Sunday night. AFTER THAT…I will be able to chill for a while and have nights and weekends free. Although, I have been doing a lot of fun things, I’m just so exhausted.
One thing I did get to do last weekend was go peach and apple picking. Kind of funny that you can pick both at the same time. I’m picking the last of the summer produce and the beginning of the fall produce. Ultimately, I got 8 pounds of fresh, juicy peaches that need to be eaten fast! I decided to make this Heirloom Tomato & Peach Salad with Farro, Burrata, and Basil. Soooo delicious!
First of all, let’s talk heirloom tomatoes. I don’t know what it is about them, but I love them. I love the variety of shapes, colors, and sizes. They’re juicy and so delicious on their own with a little salt. Not to mention they pair so well with sweet peaches, olive oil, basil, farro and burrata in this salad. I am so sad that they will be leaving the shelves of the grocery store and farmer markets soon…but I know I’ll be making this dish again and again over countless summers!
Let’s also talk about farro. It’s my obsession and has been for a couple months now. It’s my new favorite quinoa or brown rice. It’s nutty, hearty, and delicious. It is a whole grain and brings many benefits to you. It has more protein than quinoa and can help fight headaches and fatigue. It also keeps you super full and tastes sooooo good in salads. Especially this one. Not sure where to find it? I like Bobs Red Mill Farro, which you can usually find at your local grocery store or you can order online here. So, start adding more farro to your diet and you won’t be sad that you did 🙂
Juicy heirloom tomatoes, sweet peaches, nutty farro, fresh basil, and creamy burrata drizzled in some balsamic vinegar and olive oil and sprinkled with some salt and pepper= an AMAZING salad. It’s perfect for a healthy and light summer dinner or for entertaining guests. Not to mention it’s super healthy and nutritious for you.
Celebrate the last few weeks of summer with this delicious salad, while we prepare for the best season ever!
Heirloom Tomato & Peach Salad
Ingredients
- 1 cup Farro uncooked
- 3 cups Water
- 1.5 pounds Heirloom Tomatoes
- 2 large Peaches
- 1 Burrata cheese
- 1/2 cup Basil Leaves
- Balsamic Vinegar to taste
- Olive Oil to taste
- Salt and Pepper to taste
Instructions
- Rinse and drain the farro
- Place the farro in a pot with the 3 cups of water and a pinch of salt
- Bring to a boil and then reduce the heat to low and simmer for 30 minutes until tender
- Drain off any excess liquid and allow the farro to cool
- While the farro is cooling, slice the heirloom tomatoes and peaches into wedges
- In a large bowl or serving platter, toss together the heirloom tomatoes, peaches, farro, burrata cheese*, and basil leaves
- Drizzle the salad with balsamic vinegar and olive oil, to taste
- Sprinkle with salt and pepper, to taste
- Serve and enjoy!
- *Buratta can be served whole (as seen in the pictures) or it can be ripped up and toss the pieces into the salad
