There are many great duos out there in the food world. Peanut butter and jelly, salt and vinegar, cookies and cream-just to name a few. And of course, blueberry and lemon. I am not sure what makes this duo so good. Maybe it’s something about the tartness of the lemon with the sweetness of the blueberry that complements each other so well but it just works. So, I took this decadent food duo and made it into a healthy and delicious blueberry lemon chia pudding.
In case you have been living in a bubble, Chia Seeds are a superfood that has become very trendy in the last few years. According to BBC Good Food, chia seeds are rich sources of fiber, omega-3 fatty acids, protein, and minerals such as calcium and magnesium.
Therefore, Chia Seeds are a great nutritional powerhouse for you to start incorporating into your diet if you haven’t already. One easy way to do so is, you guessed it, through this Blueberry Lemon Chia Pudding recipe. Just make sure to grab Whole Chia Seeds and not ground chia seeds for this recipe.
I am still attempting to adjust myself to the 9 to 5 job that takes over most of my life. I am finding less time to cook as much as I’d like to and cannot just make things on a whim anymore without being at home. So, like many other working individuals, I have had to meal prep.
I even meal prep breakfasts so I can sleep in a little more and just wake up, grab my breakfast, go to the gym before work and get to the office by 9 AM. Those are very ambitious days, though. Most of the time I will meal prep my breakfast so I can sleep in til the very last minute before dashing out the door to work.
This is one of my favorite breakfasts to meal prep. It’s so easy to grab and go and is so so healthy for you. Totally beats grabbing a bagel on my way out, which is my total weakness. But if I’ve learned anything from how good Jennifer Anniston looks in her 40s, it’s to live a life like hers, and she only eats bread on the weekend. Thanks Jen, I’ll follow that advice and skip the bagels during the week for now.
While I like to eat this as a meal prep breakfast, it can also be eaten as a dessert or a mid afternoon snack. Chia pudding is totally versatile. It is healthy enough to be eaten at any time of the day and delicious enough to be treated as a dessert. It’s up to you how you want to eat it.

Blueberry Lemon Chia Pudding
Ingredients
Lemon Chia Pudding
- 1/2 cup Chia Seeds
- 1 1/2 cup Coconut Milk from a can
- 2 1/2 Tablespoons Maple Syrup
- 2 1/2 Tablespoons Lemon Juice
- 1/2 teaspoon Vanilla Extract
- Zest of 2 Lemons
Blueberry Puree
- 2 cups Frozen Blueberries
- 1/4 cup Water
Instructions
Lemon Chia Pudding
- Place all ingredients into a bowl or jar and mix together
- Cover and place in the refrigerator for 1 to 2 hours to let set
- After the pudding has set and has a thicker consistency, take out of the fridge
- Layer or top the pudding with the blueberry puree
- Serve and enjoy
Blueberry Puree
- Place the frozen blueberries and water into a blender or food processor
- Pulse or blend until the mixture is completely pureed and smooth
- Spoon the blueberry puree on to the lemon chia pudding
- Serve and enjoy
