Blueberry Lemon Chia Pudding

Ingredients
  

Lemon Chia Pudding

  • 1/2 cup Chia Seeds
  • 1 1/2 cup Coconut Milk from a can
  • 2 1/2 Tablespoons Maple Syrup
  • 2 1/2 Tablespoons Lemon Juice
  • 1/2 teaspoon Vanilla Extract
  • Zest of 2 Lemons

Blueberry Puree

  • 2 cups Frozen Blueberries
  • 1/4 cup Water

Instructions
 

Lemon Chia Pudding

  • Place all ingredients into a bowl or jar and mix together
  • Cover and place in the refrigerator for 1 to 2 hours to let set
  • After the pudding has set and has a thicker consistency, take out of the fridge
  • Layer or top the pudding with the blueberry puree
  • Serve and enjoy

Blueberry Puree

  • Place the frozen blueberries and water into a blender or food processor
  • Pulse or blend until the mixture is completely pureed and smooth
  • Spoon the blueberry puree on to the lemon chia pudding
  • Serve and enjoy
