Preheat oven to 400 degrees F
Grease a baking pan
Cut the cauliflower head into bite-sized florets
Place the beaten eggs in one bowl and the breadcrumbs in another bowl
Dip the cauliflower florets first into the beaten eggs and then press into the breadcrumbs, until fully coated
Place the coated cauliflower florets on the prepared baking sheet
Once done with the whole batch, place into the oven for 20-25 minutes, until golden brown
After about 10 to 15 minutes, flip the cauliflower over onto the opposite side to continue baking for the remaining time
While cauliflower is cooking, heat up a medium saucepan over medium-high heat
Combine honey, garlic, soy sauce, and sriracha in the saucepan
Heat for a few minutes while continuously stirring
In a separate small bowl, whisk together the cornstarch and 1/3 cup of water
Stir mixture into saucepan and cook until mixture begins to thicken, about 1-2 minutes
Remove cauliflower from the oven when finished baking
Allow to cool for a few minutes and pour sauce over cauliflower
Toss the sauce in with the cooked cauliflower until fully coated
Top with green onions/chives and sesame seeds
Serve with rice or cooked vegetables and enjoy!
