Take the halloumi out of the package and cut in half (cut the halves diagonally if you want smaller pieces). Pat the halloumi dry with paper towels.
Heat the oil in a large nonstick skillet over medium heat.
Place the halloumi pieces in the skillet and sear until golden brown on each side, about two minutes each side. Cook the halloumi in batches and add more oil, as needed.
When the halloumi is golden brown, transfer to a plate topped with paper towels to absorb the oil.
Warm the maple syrup in the microwave and place the halloumi on a serving plate.
Drizzle the halloumi with the maple syrup and top with the pomegranate arils and pumpkin seeds.
