Baked Honey Garlic Cauliflower

Ingredients
  

  • 1 medium-sized Cauliflower cut into bite-sized florets
  • 2 large Eggs beaten
  • 3/4 cup Breadcrumbs can also substitute for almond meal/flour
  • 1/3 cup Honey
  • 4 cloves Garlic finely minced or ground into a paste
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Sriracha optional
  • 1 Tablespoon Cornstarch
  • 1 Tablespoon Green Onions or Chives chopped
  • Sesame Seeds to top

Instructions
 

  • Preheat oven to 400 degrees F
  • Grease a baking pan
  • Cut the cauliflower head into bite-sized florets
  • Place the beaten eggs in one bowl and the breadcrumbs in another bowl
  • Dip the cauliflower florets first into the beaten eggs and then press into the breadcrumbs, until fully coated
  • Place the coated cauliflower florets on the prepared baking sheet
  • Once done with the whole batch, place into the oven for 20-25 minutes, until golden brown
  • After about 10 to 15 minutes, flip the cauliflower over onto the opposite side to continue baking for the remaining time
  • While cauliflower is cooking, heat up a medium saucepan over medium-high heat
  • Combine honey, garlic, soy sauce, and sriracha in the saucepan
  • Heat for a few minutes while continuously stirring
  • In a separate small bowl, whisk together the cornstarch and 1/3 cup of water
  • Stir mixture into saucepan and cook until mixture begins to thicken, about 1-2 minutes
  • Remove cauliflower from the oven when finished baking
  • Allow to cool for a few minutes and pour sauce over cauliflower
  • Toss the sauce in with the cooked cauliflower until fully coated
  • Top with green onions/chives and sesame seeds
  • Serve with rice or cooked vegetables and enjoy!
