Dark Chocolate Peppermint Truffles

Ingredients
  

  • 1 cup Cacao Powder
  • 1 Avocado peeled and pitted
  • 1/4 cup Coconut Oil
  • 6 Tablespoons Maple Syrup
  • 1/2 teaspoon Peppermint Extract
  • 1/2 teaspoon Vanilla Extract
  • Crushed Peppermints optional
  • Melted Dark Chocolate for Dipping optional

Instructions
 

  • Place all ingredients into a food processor
  • Blend mixture until smooth
  • Place mixture in the refrigerator for 10 minutes
  • Take out and roll into quarter-sized balls
  • Roll in extra cacao powder, crushed peppermints, or dip into melted dark chocolate (then let them cool in refrigerator)
  • Serve and enjoy!
