Garlic Herb Mashed Cauliflower

Ingredients
  

  • 1 Head Cauliflower
  • 1 Tablespoon Olive Oil
  • 3 Cloves Garlic minced
  • 1/4 cup Greek Yogurt Plain
  • 2 Teaspoons Thyme chopped
  • 2 Teaspoons Rosemary chopped
  • Salt and Pepper to taste

Instructions
 

  • Trim the leaves off the cauliflower and cut up into florets
  • Place florets in a large pot and cover with salted water
  • Boil or steam the cauliflower until the florets are tender and cooked (about 10-15 minutes)
  • While the cauliflower is cooking, heat the olive oil in a medium-sized frying pan
  • Saute the minced garlic for 1-2 minutes until golden brown
  • Set the garlic oil aside
  • Once the cauliflower is done cooking, discard the water
  • Pat the florets dry with paper towels or squeeze dry in a cloth- make sure to get out as much water as you can!
  • Place the cauliflower, garlic, olive oil, greek yogurt, thyme, rosemary, and salt and pepper into a food processor
  • Blend until smooth
  • Place mashed cauliflower on a serving plate and top with thyme, rosemary, and butter/olive oil
  • Serve and enjoy!
