Trim the leaves off the cauliflower and cut up into florets
Place florets in a large pot and cover with salted water
Boil or steam the cauliflower until the florets are tender and cooked (about 10-15 minutes)
While the cauliflower is cooking, heat the olive oil in a medium-sized frying pan
Saute the minced garlic for 1-2 minutes until golden brown
Set the garlic oil aside
Once the cauliflower is done cooking, discard the water
Pat the florets dry with paper towels or squeeze dry in a cloth- make sure to get out as much water as you can!
Place the cauliflower, garlic, olive oil, greek yogurt, thyme, rosemary, and salt and pepper into a food processor
Blend until smooth
Place mashed cauliflower on a serving plate and top with thyme, rosemary, and butter/olive oil
Serve and enjoy!
