Chickpea Flour Skillet Cookie

Ingredients
  

  • 1 cup Chickpea Flour/Garbanzo Bean Flour
  • 1/4 cup Coconut Sugar or regular sugar works fine too
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 Egg
  • 1/4 cup Coconut Oil melted
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Chocolate Chips
  • Vanilla Ice Cream optional
  • Hot fudge optional

Instructions
 

  • Preheat oven to 350 F
  • Generously grease a 3.5-inch cast iron skillet
  • Mix the chickpea flour, sugar, baking soda, and salt in a large bowl
  • In a separate bowl, beat the egg, coconut oil, and vanilla extract together
  • Pour the beaten wet mixture into the dry ingredients
  • Mix all the ingredients together until thoroughly blended
  • Mix in the chocolate chips
  • Spoon the dough into the cast iron skillet and using a spoon or spatula spread the mixture around until evenly spread across the skillet
  • Bake in oven for about 25 or so minutes or until the cookie is golden brown and cooked all the way through
  • Top with vanilla ice cream, hot fudge, or any other preferred toppings
  • Serve and enjoy!
