Preheat oven to 350 F
Generously grease a 3.5-inch cast iron skillet
Mix the chickpea flour, sugar, baking soda, and salt in a large bowl
In a separate bowl, beat the egg, coconut oil, and vanilla extract together
Pour the beaten wet mixture into the dry ingredients
Mix all the ingredients together until thoroughly blended
Mix in the chocolate chips
Spoon the dough into the cast iron skillet and using a spoon or spatula spread the mixture around until evenly spread across the skillet
Bake in oven for about 25 or so minutes or until the cookie is golden brown and cooked all the way through
Top with vanilla ice cream, hot fudge, or any other preferred toppings
