Spinach & Sun Dried Tomato Turkey Burgers

Ingredients
  

  • 1 pound Ground Turkey
  • 5 ounces Frozen Chopped Spinach thawed (about half a package)
  • 1/3 cup Sun Dried Tomatoes chopped
  • 2 Cloves of Garlic minced
  • 1 teaspoon Dried Oregano
  • 1 Egg
  • 1/4 cup Breadcrumbs (gluten-free, whole wheat, or regular) or Oat Flour
  • Salt and Pepper
  • 1 Tablespoon Olive Oil
  • 1 8.8 ounce Package of Halloumi Cheese
  • Arugula
  • Tzatziki
  • 6 Burger Buns

Instructions
 

  • Thaw the frozen spinach and drain some of the extra water
  • In a large bowl, mix together the ground turkey, spinach, sun dried tomatoes, garlic, oregano, and the egg
  • Pour the oats into a food processor and pulse a few times until the oats are fine and the consistency of bread crumbs
  • Mix the oats in with the burger mixture
  • Using your hands, form the mixture into burger sized patties (should be enough for about 6 burgers)
  • Heat half the olive oil in a skillet or grill over medium high
  • Cook until the burger is well done and the turkey is no longer pink inside
  • Meanwhile, slice the halloumi cheese into 6 thick slices
  • Heat the other half of the olive oil in another skillet or on the grill over medium high
  • Place the halloumi cheese slices on the skillet or grill, cook on one side until golden brown, flip and cook the other side until golden brown
  • Serve the burger patties on the buns and top with fried/grilled halloumi cheese, arugula, and tzatziki
  • Serve and enjoy!
