Place 4 cups of the cut up watermelon and all of the sliced kiwis into a pitcher, setting aside 1/2 cup of the watermelon chunks
Place the 1/2 cup of the watermelon chunks into a blender and puree until smooth to make fresh squeezed watermelon juice (add a tablespoon of water if needed to blend)
Strain the watermelon juice through a strainer and discard the pulp
Pour the fresh squeezed watermelon juice into the pitcher on top of the watermelon chunks and kiwi slices
Squeeze the juice of 2 small limes on top of the fruit
Add in the vodka, rosé, simple syrup/honey, and seltzer
Stir the sangria with a large spoon until thoroughly mixed
Let sit in the refrigerator for at least 1 hour
Once the sangria has chilled for at least an hour, take out and pour into wine glasses
Garnish with mint springs, lime slices, and mini watermelon slices
