Blueberry Peach Baked Oatmeal

Ingredients
  

  • 12 ounces of Blueberries frozen or fresh both work
  • 2 Peaches medium-sized, sliced
  • 2 cups Rolled Oats
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon Powder
  • 1/2 teaspoon Salt
  • 1/3 cup Almonds sliced
  • 1 Large Egg
  • 2 cups Almond Milk
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Honey or Maple Syrup
  • 3 tablespoons Coconut Oil room temperature
  • Vanilla Yogurt or Maple Syrup for toppings

Instructions
 

  • Preheat the oven to 375 degrees F
  • Take a 9-10.5" baking pan or cast iron skillet and grease with a little bit of coconut oil
  • Layer the bottom of the pan with slices of one peach and 6 ounces of blueberries (reserving the remainder peach slices and blueberries to top)
  • Mix together the rolled oats, baking powder, cinnamon powder, salt, and almonds in a large mixing bowl
  • Spread the dry mixture evenly over the top of the bottom fruit layer in the pan
  • Top the oat layer with the remaining peach slices and blueberries
  • Mix together the large egg, almond milk, vanilla extract, honey/maple syrup, and coconut oil in mixing bowl until the egg and the coconut oil are thoroughly mixed throughout
  • Pour the liquid ingredients over the fruit and dry ingredients in the pan
  • The pan will be be very full with liquid but not to worry, the oats will absorb it all while cooking
  • Place in the preheated oven for 30-40 minutes until the oatmeal has set throughout
  • Once it is finished cooking, allow to sit for a few minutes to cool
  • Serve with vanilla yogurt or extra maple syrup on top and enjoy!
