Mix together the oat flour, baking powder, salt, and chives in a large mixing bowl
Whisk together the eggs, milk, olive oil, 1 cup of cheddar cheese (set the rest aside), and pumpkin puree
Pour the wet ingredients into the dry ingredients
Stir until there are no remaining clumps of flour and it is evenly mixed
Pour about 1 cup (or according to your waffle iron) of the batter into the waffle iron
Sprinkle some extra cheddar cheese on top of the batter, close the waffle iron and let cook
Cook according to waffle iron directions (I cooked mine for about 6 minutes)
When waffle is done cooking, remove and set aside on a separate plate
Repeat for the remaining of the waffle batter
Top prepared waffles with some greek yogurt, chives, and extra cheddar cheese
Serve and enjoy!
