Pumpkin Cheddar Chive Waffles

Ingredients
  

  • 2 cups Oat Flour
  • 1 Tablespoon Baking Powder
  • 1/2 Teaspoon Salt
  • 3 Heaping Tablespoons of Chives finely chopped
  • 2 Large Eggs
  • 1 cup Milk of any kind-dairy or non-dairy
  • 3 Tablespoons Olive Oil
  • 1 1/2 Heaping Cups Cheddar Cheese shredded
  • 1 cup Pumpkin Puree fresh or canned
  • Greek yogurt to top
  • Chives to garnish

Instructions
 

  • Mix together the oat flour, baking powder, salt, and chives in a large mixing bowl
  • Whisk together the eggs, milk, olive oil, 1 cup of cheddar cheese (set the rest aside), and pumpkin puree
  • Pour the wet ingredients into the dry ingredients
  • Stir until there are no remaining clumps of flour and it is evenly mixed
  • Pour about 1 cup (or according to your waffle iron) of the batter into the waffle iron
  • Sprinkle some extra cheddar cheese on top of the batter, close the waffle iron and let cook
  • Cook according to waffle iron directions (I cooked mine for about 6 minutes)
  • When waffle is done cooking, remove and set aside on a separate plate
  • Repeat for the remaining of the waffle batter
  • Top prepared waffles with some greek yogurt, chives, and extra cheddar cheese
  • Serve and enjoy!
