I made these smoothie pops about two weeks ago when it was a beautiful summer-like day in early September. I was trying to hold on to summer for as long as I could. Even though I was back at school and had already started classes, the weather made it feel like summer was still here! So, to make that nice warm sunny day feel even more like summer, I decided to make some tropical popsicles for me and my roommates. I had a bag of frozen mango chunks, frozen pineapple chunks, and a bag of coconut flakes already in my kitchen. I just put those ingredients together and voila! Mango pineapple coconut smoothie pops!
The only troublesome thing that occurred was the lack of popsicle sticks. I found these white sort of lollipop or cake pop sticks lying around so I thought that they would work for my popsicles. Well, they didn’t, they were just barely strong enough. Note to self, next time use actual popsicle sticks. Here’s what I did to make these tropical popsicles:
RECIPE:
I did not measure the ingredients, I added them to taste.
Ingredients:
- Frozen mango chunks
- Frozen pineapple chunks
- Coconut milk
- Coconut flakes
Directions:
- Throw some mango chunks and pineapple chunks and coconut flakes into a blender
- Pour coconut milk on top (enough for the blender to work)
- Blend until smooth
- Pour into popsicle molds
- Place a popsicle stick (not a cake pop stick) in the center of each mold
- Place in freezer until frozen
- Take out and enjoy 🙂
