For some reason, I have had a weird craving for tacos lately. Tacos of all sorts. Fish tacos, chickpea tacos, veggie tacos, shrimp tacos, mushroom tacos, and of course, tofu tacos. So naturally I invested in a whole pack of some mini corn tortillas, which is hard to eat entirely by yourself unless you’re eating a serving of tacos a day. It is necessary that I finish those mini corn tortillas before they go bad, so stay tuned for some more taco recipes. I’m sure i’ll have to get creative if I’m going to be eating these often enough, given that I can get bored of eating the same thing everyday pretty easily.
I made these tofu tacos by cooking the tofu in some taco seasoning mix. Therefore, these tacos tasted pretty much like the ground beef tacos except substituting tofu instead of the beef. Although, I found that without a sauce of some kind like guacamole, salsa, sour cream, they can be a little dry. I would definitely recommend topping these with a sauce of your choice when eating them. Anyways, here is the recipe, hope you enjoy!
RECIPE:
Ingredients:
I didn’t do exact measurements- but here is what you need
- Firm tofu, broken into crumbles
- Chili powder
- Paprika
- Cumin
- Onion Powder
- Garlic Powder
- Cayenne
- Salt to taste
- Spinach
- Avocado
- Pepper Jack Cheese
- Sauce of your choice
Directions:
- Break up some firm tofu into crumbles (I use my fingers to break it up)
- Mix together equal parts of chili powder, paprika, cumin, onion powder, garlic powder, cayenne, and salt (to taste) to create the taco seasoning
- Place the crumbled tofu in a bowl and drizzle with some olive oil
- Mix in the taco seasoning with the tofu
- You can either microwave the tofu for 30 seconds until cooked or you can sauté the tofu in a frying pan on the stove until cooked- I think microwave is easier and faster and just as efficient
- Pack a corn tortilla with some spinach leaves, sliced avocado, pepper jack cheese and spoon in some tofu
- Top with desired sauce or other preferred toppings
- Serve and enjoy 🙂
