I am so excited about the warm spring weather that recently came over Boston. Yesterday, everyone was sitting outside on the grass, riding bikes, walking their dogs, and indulging in picnics. Everyone just seems happier. I know the warm weather gets me up and moving and gives me more energy to do things, hence also makes me a lot happier. Now, I am working out almost everyday and spending at least an hour outside. Why can’t I get this motivation year round? Spring, please stay forever!
So with the overwhelming feeling of spring, I bought all spring/summer produce for this week. In the winter, we tend to eat tons of heavy stews, soups, and hearty root vegetables. Now all everyone wants is a salad, some berries, some spring vegetables and plenty of lighter meals. So with my recent purchase of more “spring-like” produce, I decided to make some strawberry balsamic lettuce wraps with goat cheese crumbles and chopped pecans. This tasted amazing!! The creamy texture of the goat cheese combined with the sweetness of the strawberry, the tanginess of the balsamic glaze, and the crunch of the pecans will leave your taste buds screaming for more. It is great as an appetizer for a dinner, a light lunch, or a small snack. I used living Boston lettuce that I found at the supermarket, but you can really use any lettuce that you prefer! Strawberry Balsamic Lettuce Wraps
Ingredients
- 3-5 pieces of Boston Lettuce also known as Butter Lettuce
- 3-5 Large Strawberries sliced into thin slices
- 1 Tablespoon of Goat Cheese crumbles
- 2 Tablespoons Pecans chopped
- Balsamic Glaze store-bought or homemade
Instructions
- Lay out each piece of lettuce on a plate
- Slice your strawberries and equally distribute the sliced strawberries on top of each piece of lettuce
- Crumble some goat cheese and equally distribute the cheese on top of each piece of lettuce
- Take the pecans and chop them or use already chopped pecans and equally distribute on top of each piece of lettuce
- Drizzle some balsamic glaze on top of each lettuce wrap
- Serve lettuce wraps on a plate, eat, and enjoy!

This looks so delicious! I just saw some balsamic glaze at the grocery store and thought it looked interesting but I didn’t get it because I didn’t know what to do with it. Will definitely get some next time and try this out.
