Who’s excited for Memorial Day weekend this weekend? I know I am…especially if it means devouring these Spinach & Sun Dried Tomato Turkey Burgers topped with fried halloumi cheese, arugula, and tzatziki. I mean, YUM.
On another note, I am also really excited for Memorial Day weekend because I have a bachelor party to attend! That’s right…a bachelor party! One of my best guy friends from growing up asked me to be a groomsperson in his wedding and I am beyond excited. And no, I am not wearing a suit… I am wearing a grey bridal dress that will match the groomsmen’s grey tuxes. They are getting married at the end of June in Chicago and I could not be more excited for them or their wedding.
Anywho, this weekend we are pregaming their wedding with a full on bachelor/bachelorette party. It will be filled with lots of delicious food, excessive amounts of alcohol, and fun games and activities. So, cheers to the freaking weekend!
If you’re celebrating your Memorial Day weekend in a healthier, more tame way and having a BBQ with friends and family, I suggest you totally make these Spinach and Sun Dried Tomato Turkey burgers. First of all, they’re a healthier burger for you, so they’re still in line with your summer body goals. Second of all, they are BURSTING with flavor. The spinach and sun dried tomato, squeaky and salty halloumi cheese, spicy arugula, with garlicky and creamy tzatziki creates such a delicious combination of flavors. These burgers are quite the crowd pleaser making them a perfect dish to wow your friends and family.
Let’s talk halloumi cheese. It’s the best cheese. My favorite kinda cheese. Cheese that you can fry, or grill, or eat plain. It’s so versatile and tasty. It’s originally a Greek cheese, which is why it pairs so well with these Greek style turkey burgers. It’s warm, soft, salty, squeaky DELICIOUSNESS. Be sure to get yourself an extra pack (or two) just for snacking while cooking…you’ll be glad you did!
I can’t wait to sit on my roof deck overlooking the Charles river, watching the sunset, drinking some cold sparkling prosecco, and eating these burgers all summer long…

Spinach & Sun Dried Tomato Turkey Burgers
Ingredients
- 1 pound Ground Turkey
- 5 ounces Frozen Chopped Spinach thawed (about half a package)
- 1/3 cup Sun Dried Tomatoes chopped
- 2 Cloves of Garlic minced
- 1 teaspoon Dried Oregano
- 1 Egg
- 1/4 cup Breadcrumbs (gluten-free, whole wheat, or regular) or Oat Flour
- Salt and Pepper
- 1 Tablespoon Olive Oil
- 1 8.8 ounce Package of Halloumi Cheese
- Arugula
- Tzatziki
- 6 Burger Buns
Instructions
- Thaw the frozen spinach and drain some of the extra water
- In a large bowl, mix together the ground turkey, spinach, sun dried tomatoes, garlic, oregano, and the egg
- Pour the oats into a food processor and pulse a few times until the oats are fine and the consistency of bread crumbs
- Mix the oats in with the burger mixture
- Using your hands, form the mixture into burger sized patties (should be enough for about 6 burgers)
- Heat half the olive oil in a skillet or grill over medium high
- Cook until the burger is well done and the turkey is no longer pink inside
- Meanwhile, slice the halloumi cheese into 6 thick slices
- Heat the other half of the olive oil in another skillet or on the grill over medium high
- Place the halloumi cheese slices on the skillet or grill, cook on one side until golden brown, flip and cook the other side until golden brown
- Serve the burger patties on the buns and top with fried/grilled halloumi cheese, arugula, and tzatziki
- Serve and enjoy!

I like this one from Wanderlust Kitchen, it’s pretty authentic. http://thewanderlustkitchen.com/authentic-greek-tzatziki/ However, I’ve seen others using WAY more garlic, which is actually they way they serve it in Greece- SUPER garlicky. But I think this recipe does a nice job on adding just the right amount of garlic and not so much that it’s overpowering.
