It’s finally the MOST wonderful time of the year…and no, not Christmas. FALL! So far, I have only partaken in one fall activity: apple picking. And I got enough apples to feed a village and then some. But I cannot wait to engage in so many more, like pumpkin carving, leaf peeping, haunted houses, and hiking along beautiful New England trails. It really brings me such joy.
Besides all of those fall activities, I absolutely love fall food. Especially pumpkin. Pumpkin muffins, pumpkin squares, pumpkin bread…you name it. And call me basic but I’ll admit it…I love PSLs too!
Majority of the times I eat pumpkin, it’s usually in sweet dishes rather than savory. And usually when I consume waffles, they are also sweet rather than savory. I decided to take both pumpkin and waffles and make them SAVORY. Thus I created these Pumpkin Cheddar Chive Waffles.
They’re cheesy, they’re chivey, and they’re so yummy. The pumpkin adds a veryyyyy subtle flavor. It is more added for enhancing the fluffy texture of the waffle, while giving you an extra boost of veggies. So to all you pumpkin haters, these waffles can appeal to you too!
Not to mention they’re more nutritious than your average waffle! They’re made with oat flour instead of regular white refined flour, which means it is also safe for gluten-free diets. Also, the addition of the pumpkin makes an easy way to incorporate more veggies into your breakfast without sacrificing good flavor.
Top them with some plain Greek yogurt, some chives, and some shredded cheddar cheese and you’re good to go!

Pumpkin Cheddar Chive Waffles
Ingredients
- 2 cups Oat Flour
- 1 Tablespoon Baking Powder
- 1/2 Teaspoon Salt
- 3 Heaping Tablespoons of Chives finely chopped
- 2 Large Eggs
- 1 cup Milk of any kind-dairy or non-dairy
- 3 Tablespoons Olive Oil
- 1 1/2 Heaping Cups Cheddar Cheese shredded
- 1 cup Pumpkin Puree fresh or canned
- Greek yogurt to top
- Chives to garnish
Instructions
- Mix together the oat flour, baking powder, salt, and chives in a large mixing bowl
- Whisk together the eggs, milk, olive oil, 1 cup of cheddar cheese (set the rest aside), and pumpkin puree
- Pour the wet ingredients into the dry ingredients
- Stir until there are no remaining clumps of flour and it is evenly mixed
- Pour about 1 cup (or according to your waffle iron) of the batter into the waffle iron
- Sprinkle some extra cheddar cheese on top of the batter, close the waffle iron and let cook
- Cook according to waffle iron directions (I cooked mine for about 6 minutes)
- When waffle is done cooking, remove and set aside on a separate plate
- Repeat for the remaining of the waffle batter
- Top prepared waffles with some greek yogurt, chives, and extra cheddar cheese
- Serve and enjoy!
