There seems to be some hope that this bitter cold winter will end sometime soon. The temperature has gotten a little bit warmer. Yesterday was a high of 37 degrees and the sun was shining bright, which felt like spring to everyone. But even so, if you look around Boston you can still see the 4-6 feet mounds of snow on the streets almost covering the first floor windows of most buildings. It has been quite a brutal winter. So in that spirit, I decided to make some pineapple coconut energy bites yesterday to bring my mind and my taste buds away from the winter and into a tropical paradise. I adapted the recipe from Laura Machell from The Green Fork. They came out delicious and tasted like a sweet piña colada in your mouth.
I hope they get your mind off of the frigidly cold winter and into a tropical paradise as well. Here is the recipe:
Pineapple Coconut Energy Bites
Ingredients
- 1/2 cup Almond Meal or flour
- 1/3 cup Coconut Flour
- 1/4 teaspoon Sea Salt
- 2 Tablespoons Honey or Maple Syrup
- 3 Tablespoons Pineapple Juice
- 2 Tablespoons Coconut Oil melted
- 1 teaspoon Vanilla Extract
Instructions
- Place all ingredients into a food processor until thoroughly mixed
- Shape dough into small balls
- Serve and enjoy 🙂
