Yes, you read that right. Chickpea flour skillet cookie…using chickpea flour. I know what you’re thinking and no this cookie does not taste like hummus with chocolate chips in it. It actually tastes pretty much like a regular old-fashioned chocolate chip cookie. You will not know the difference because it is so damn delicious! And I mean…just look at it! Can someone please take this cookie away from me before I stuff the whole thing in my mouth…please?!Using chickpea flour in this recipe makes this scrumptious skillet cookie grain-free! Chickpea flour is highly nutritious, gluten-free, and high protein! It is also called Garbanzo Bean Flour, so when looking for it in grocery stores or here online it is often referred to as garbanzo bean instead of chickpea. I also tried to adapt my recipe to adding less sugar. This recipe calls for 1/4 cup of coconut sugar but you can also use regular white sugar too. Now mind you, that is still a lot of sugar, so treat this like a healthier version of the typical dessert but not as a snack. But it is still, a grain-free, less sweet, healthier version of your favorite old-fashioned chocolate chip cookie!To make this, you pretty much bake it like normal cookies. You mix the wet ingredients and dry ingredients separately, then you combine them together in a big mixing bowl, then you transfer the dough to a fully greased cast iron skillet to bake. Except you bake this recipe for more than twice as long as regular cookies because the cookie itself is thicker. This recipe is technically made to serve about 2-3 people only. It’s a mini recipe for a mini skillet. So for my pictures, I used a 3.5-inch cast iron skillet. However, you could also use a slightly larger one like a 6.5-inch skillet but it would just create a thinner cookie and take less time to bake. Feel free to experiment! Can you see how hard it is to take pictures of ice cream? It melts. In seconds. Especially, on top of a gooey fresh from the oven cookie. And yes, I did try and wait for it to cool down, but I was impatient because I wanted to eat the cookie while it was warm and still get to bed early enough to wake up for work in the morning. Melting ice cream aside, this cookie does taste even better topped with (cold) ice cream and hot fudge. So do yourself a favor and don’t forget those two things when you’re preparing to bake this recipe!So come on and give this chickpea flour skillet cookie a try and see how you like it. The texture will be slightly different than a normal cookie, most likely it will feel denser and more like a cookie cake. So no loss there…who doesn’t love a cookie cake? Chickpea Flour Skillet Cookie
Ingredients
- 1 cup Chickpea Flour/Garbanzo Bean Flour
- 1/4 cup Coconut Sugar or regular sugar works fine too
- 1/4 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1 Egg
- 1/4 cup Coconut Oil melted
- 1 teaspoon Vanilla Extract
- 1/4 cup Chocolate Chips
- Vanilla Ice Cream optional
- Hot fudge optional
Instructions
- Preheat oven to 350 F
- Generously grease a 3.5-inch cast iron skillet
- Mix the chickpea flour, sugar, baking soda, and salt in a large bowl
- In a separate bowl, beat the egg, coconut oil, and vanilla extract together
- Pour the beaten wet mixture into the dry ingredients
- Mix all the ingredients together until thoroughly blended
- Mix in the chocolate chips
- Spoon the dough into the cast iron skillet and using a spoon or spatula spread the mixture around until evenly spread across the skillet
- Bake in oven for about 25 or so minutes or until the cookie is golden brown and cooked all the way through
- Top with vanilla ice cream, hot fudge, or any other preferred toppings
- Serve and enjoy!
