These last few weeks I have been stressed out to the max. I moved apartments across the city. I have never had a move like that before. My roommate and I have so much stuff that it took us multiple trips in addition to hiring movers. We moved in August 1st and we are STILL in the midst of settling in. The worst part is that I hate feeling so disorganized. I hate not knowing where everything is and having things sprawled out across the floor in a giant pile. But, soon this too shall pass once I get some new furniture and storage bins.
It’s just been one of those weeks where you’re so busy and stressed, you seem to find yourself in those everything-is-going-wrong type of situations, and it makes you just want to crawl up into a ball and hide. Needless to say, I was in desperate need for some summertime comfort food.
Summertime food to me means crisp, sweet peaches and vibrant, juicy blueberries. Comfort food to me means oatmeal. It’s always reminded me of growing up when I used to eat the Dinosaur Oatmeal. You know, the little packets that’re super unhealthy and filled with sugary candy eggs that hatch. Oatmeal also reminds me of cold, snowy winter days when you’re bundled up inside in a blanket and watching the TV. And besides being comforting, oatmeal is one of my favorite foods of all time. I still have it for breakfast every morning and I NEVER get tired of it.
So in combining both of my favorite summertime fruits with some comfort food oatmeal, I made this Blueberry Peach Baked Oatmeal.
The sweetness of the peaches perfectly balances out the tartness of the blueberries. The oatmeal adds some complexity with a little bit of cinnamon and honey. The recipe is lower on sugar making this a healthier baked oatmeal and more nutritious breakfast.
And it’s honestly perfect for meal prep. I made this last weekend and have been scooping out servings to eat for breakfast every day. I’ve also had a serving or two for my dessert at the end of those long days, when I just wanted a hint of something sweet! It’s super satisfying without all the extra calories 🙂
This recipe can be made in any 9″-10″ baking dish or Cast Iron Skillet. You start by layering the blueberries and peaches on the bottom. Mix together the dry ingredients and spread on top of the bottom layer fruit. Then pour the wet ingredients over top. The skillet/baking dish will seem a little full of liquid but that’s okay…the oatmeal will do it’s job and absorb all of it and transform into soft, deliciously irresistible baked oatmeal.

Blueberry Peach Baked Oatmeal
Ingredients
- 12 ounces of Blueberries frozen or fresh both work
- 2 Peaches medium-sized, sliced
- 2 cups Rolled Oats
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon Powder
- 1/2 teaspoon Salt
- 1/3 cup Almonds sliced
- 1 Large Egg
- 2 cups Almond Milk
- 1 teaspoon Vanilla Extract
- 1/4 cup Honey or Maple Syrup
- 3 tablespoons Coconut Oil room temperature
- Vanilla Yogurt or Maple Syrup for toppings
Instructions
- Preheat the oven to 375 degrees F
- Take a 9-10.5" baking pan or cast iron skillet and grease with a little bit of coconut oil
- Layer the bottom of the pan with slices of one peach and 6 ounces of blueberries (reserving the remainder peach slices and blueberries to top)
- Mix together the rolled oats, baking powder, cinnamon powder, salt, and almonds in a large mixing bowl
- Spread the dry mixture evenly over the top of the bottom fruit layer in the pan
- Top the oat layer with the remaining peach slices and blueberries
- Mix together the large egg, almond milk, vanilla extract, honey/maple syrup, and coconut oil in mixing bowl until the egg and the coconut oil are thoroughly mixed throughout
- Pour the liquid ingredients over the fruit and dry ingredients in the pan
- The pan will be be very full with liquid but not to worry, the oats will absorb it all while cooking
- Place in the preheated oven for 30-40 minutes until the oatmeal has set throughout
- Once it is finished cooking, allow to sit for a few minutes to cool
- Serve with vanilla yogurt or extra maple syrup on top and enjoy!
