I’ve been reading everywhere about the nutritional benefits of beets. They are so good for you! Consuming them will help to cleanse your liver, lower blood pressure, fight inflammation and cancer, detoxify, and of course provide you with a rich amount of fiber and vitamins. But of course, I am so sick of just eating them in salads. Like how many roasted beet and goat cheese salads can one consume?
And so, I decided to make a beet smoothie. Why make a smoothie and not a juice? Because smoothies have fiber; something that juices lack because the fiber is taken out. This leaves behind the sugar, which your body will absorb as fat. When consuming the sugar from the fruits and vegetables with the fiber, your body is able to digest it and does not absorb the sugar as fast. That is just one of the reasons why I made this deliciously nutritious beet smoothie!
This smoothie is super healthy for you. It combines the liver cleansing beets with antioxidant rich berries, vitamin-c packed orange juice, and digestion healthy ginger! This is basically a recipe for an amazing energy-boosting start to your day. Consume it for breakfast or when you need a light pick-me-up throughout the day!
Beet Ginger Berry Smoothie
Ingredients
- 1 small Beet roasted and peeled
- 1 cup Mixed Berries frozen or fresh
- 1 cup Orange Juice fresh squeezed
- 1/4 inch Fresh Ginger peeled
- 1 Tablespoon Chia Seeds optional
- 1 Teaspoon Bee Pollen optional
Instructions
- Place all ingredients in a blender
- Blend until smooth, adding water or more orange juice if needed
- Pour into a glass
- Serve and enjoy
