Just like the mint, we have an abundance of fresh chives in our garden…TONS of it! So, I decided to incorporate chives into a dish for a late lunch that I had today. Here is a picture from our garden of the overabundance of fresh chives we have! The flowers of chives are edible and they taste like, well…chives! But unfortunately, the flowers aren’t as fresh, as evident in this picture. I still ate them, though. They tasted just fine. Just not as vibrant purple as they should be and a little dried looking. Oh well! The chives are just perfect!I figured, usually chives go really well with potatoes. If you order a baked potato, it usually comes with sour cream, bacon, butter, and chives sprinkled on top. Also, don’t forget garlic chive mashed potatoes. Yummmmm! So basically, chives and potatoes are a match made in heaven!Not only are chives and potatoes a perfect pair, I have been meaning to make a version of Mac N’ Cheese using spiralized sweet potatoes. For those of you who have not tried spiralized sweet potatoes and substituted them for pasta, please try it soon! I absolutely love substituting sweet potatoes for pasta! I love using them more than spiralizing zucchini. When you spiralize a zucchini and cook them, there tends to be a lot more water because zucchini is naturally more watery than a sweet potato. Therefore, with sweet potatoes, you don’t get the wateriness that you get with zucchinis and you get a sweet taste that balances out any salty or spicy flavor! So another match made in heaven is sweet potatoes and some cheesy chive sauce 🙂The recipe is super simple and cheap. You just need two sweet potatoes, greek yogurt, cheddar cheese, and a few spices and seasonings. My cheesy chive sauce is adapted from Cooking Ala Mel’s Recipe for creamy greek yogurt cheese sauce. The sauce is super creamy, decadent, and cheesy, which leaves you begging for seconds. Check out my recipe below!
Sweet Potato Noodles with Cheesy Chive Sauce
Ingredients
- 2 Sweet Potatoes peeled and spiralized
- 1/2 cup water
- 2 cups Cheddar Cheese shredded
- 1/2 cup Greek Yogurt plain
- 1/4 teaspoon Onion Powder
- 1/4 teaspoon Garlic Powder
- 1/4 teaspoon Worcestershire Sauce optional
- 1-2 Tablespoons Chives chopped
- Salt and Pepper to taste
Instructions
- Peel the sweet potatoes and use the peeler or spiralizer to make "noodles"
- Place the sweet potato "noodles" in a steamer using the 1/2 cup of water to steam them
- Once the noodles are tender enough to eat, take off the heat and set aside
- Use 1/4 cup of the water used to steam the sweet potato "noodles" and place it in a large sauce pan
- Turn the heat <g class="gr_ gr_64 gr-alert gr_gramm gr_run_anim Grammar multiReplace" id="64" data-gr-id="64">on</g> low and add <g class="gr_ gr_65 gr-alert gr_gramm gr_run_anim Grammar only-del replaceWithoutSep" id="65" data-gr-id="65">in </g>the 2 cups of shredded cheddar cheese
- Mix until the cheese melts
- Add in the Greek yogurt, Onion Powder, Garlic Powder, Worcestershire Sauce, and the Chives
- Mix until well blended and the sauce is smooth
- Salt and Pepper the sauce to your preference
- Mix in the sweet potato noodles with the cheesy chive sauce
- Top with extra chopped chives for more of a chive flavor
- Serve and enjoy!
